Coconut Corn Soup

  • 1 x 400g can lite coconut milk
  • 1 cup boiling water
  • 3 cups frozen corn, defrosted
  • 1/2 cup cashew nuts
  • ¼ cup coriander
  • 1/4 red onion
  • 1 clove garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and freshly ground black pepper, to taste



  1. Pour coconut milk into a medium sauce pan. Bring to the boil. Set aside.
  2. Place all ingredients into your Kenwood Blend-X Pro. Pour over coconut milk and boiling water.
  3. Secure the lid. Using the variable speed control place on high speed for 30 seconds.
  4. Season to taste with salt and pepper. Serve.
