- Fit the scroll juicer attachment to the front, slow speed outlet of your kitchen machine and position the juice jug to catch the juice. Also position a bowl to catch the pulp under the pulp outlet.
- Trim the fruit to fit down the feed tube of the juicer. Switch the machine to speed 1 and feed half the apple pieces into the juicer. Scrunch most of the mint leaves into a bunch and push them down the feed tube, and follow them with the rest of the apple and the lime.
- Divide the juice between two serving glasses, filled with ice and top with the remaining mint leaves. Serve immediately.
Note: you can re-use the pulp by adding it to your baking for a healthy twist.
