Crunchy Red Cabbage Slaw

  • 5 egg yolks 
  • 1 tsp Dijon mustard 
  • 1.5 tbsp white wine vinegar 
  • Half tbsp lemon juice 
  • 280ml groundnut oil 
  • Salt and pepper


  • Red cabbage, quarter
  • carrots, peeled 
  • onion, peeled 
  • 10 strands chives, chopped 


  1. Attach the processor to the top, high speed outlet on your kitchen machine and fit with the knife blade. Add the egg yolks, mustard, vinegar and lemon juice and switch the machine to speed 2. With the motor running, trickle the oil down the feed tube until a thick sauce is achieved. Season to taste. 
  2. Remove the processor and pour the dressing into a bowl. Place to one side. 
  3. Clean the inside of the processor and fit with the thick shredding disc. Re-attach the processor to the top outlet and switch the machine to speed 2.  Shred the carrots and onions. Remove the shredded veg and change the disc to the thin slicing disc. Slice the cabbage into thin shreds and add to the carrots and onion.
  4.  Add around 5 tbsp of the dressing to the vegetables and toss to combine. Add more if necessary. Sprinkle with chopped chives to serve
