4 ounces margarine
1 and a half mugs dried mixed fruit
1 mug sugar
1 mug water
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
2 and a half mugs self raising flour
1 beaten egg

Nana loved to bake and I learned from the best. I have used this recipe as wedding,christening , birthday and Christmas cakes.
- Put the margarine, fruit, sugar, water, mixed spice and bicarbonate of soda in a pan and bring to the boil, simmer for about 10 mins or until the fruit plumps up.
- Leave to cool add the flour and beaten egg and put into an 8 to 10 inch lined tin.
- Bake at 170°C/Gas 3 for 1 to 1 and a half hours. Check after an hour as ovens vary.
- Serve in slices with butter, or ice and decorate.
