Ingredients

4 ounces margarine
1 and a half mugs dried mixed fruit
1 mug sugar
1 mug water
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
2 and a half mugs self raising flour
1 beaten egg

Nana loved to bake and I learned from the best. I have used this recipe as wedding,christening , birthday and Christmas cakes.

Method

  1. Put the margarine, fruit, sugar, water, mixed spice and bicarbonate of soda in a pan and bring to the boil, simmer for about 10 mins or until the fruit plumps up.  
  2. Leave to cool add the flour and beaten egg and put into an 8 to 10 inch lined tin.  
  3. Bake at 170°C/Gas 3 for 1 to 1 and a half hours.  Check after an hour as ovens vary.  
  4. Serve in slices with butter, or ice and decorate.
