Ingredients

Sweet Pastry
100g plain flour
25g lard
25g margarine
15g caster sugar water to mix

Shortcake topping
100g butter
25g caster sugar
1 egg yolk
100g plain flour
12 large teaspoons good quality lemon curd (Mum always used home made)

A lovely melt in the mouth individual pie with a tangy, tasty filling. 

Method

Adapted to suit modern living and modern appliances!

  1. Make the pastry. Blend flour and fats in a food processor and add sugar, then enough water to make a soft pastry Roll out and cut 12 rings with a cutter to line a 12 hole fairy cake tin.
  2. Put a teaspoon of lemon curd in each pastry case.
  3. Make the topping Cream butter and sugar, add the egg yolk and then mix in the flour . Pipe (or spread if preferred) on top of the lemon curd making sure there are no gaps between the pastry and the topping.
  4. Bake for 20 minutes at gas 6, 5. Sprinkle with icing sugar when cool. Yum! (especially with a spoonful of clotted cream!)
