450g mixed fruit
1 1/2 cups of water
113g of margarine
1 cup of sugar
1 tsp bicarbonate of soda
1 beaten egg
2 cups flour
1 tsp baking powder
1 tsp mixed spice
1/4 tsp cinnamon
1/4 tsp nutmeg
2 tablespoons sherry or apricot juice
30 glace cherries (cut in half)

- Boil together mixed fruit, water, margarine, sugar and bicarbonate of soda for five minutes only.
- When cold add egg, flour, baking powder, mixed spice, cinnamon, nutmeg, cherries and sherry / apricot juice.
- Mix all ingredients together and place in a lined (I never do) cake tin for 1 1/2 hours at 300°F (or 150°).
It sometimes takes a bit longer.
