Gran's Xmas Fruit Cake

Ingredients

450g mixed fruit
1 1/2 cups of water
113g of margarine
1 cup of sugar
1 tsp bicarbonate of soda
1 beaten egg
2 cups flour
1 tsp baking powder
1 tsp mixed spice
1/4 tsp cinnamon
1/4 tsp nutmeg
2 tablespoons sherry or apricot juice
30 glace cherries (cut in half)

Method

  1. Boil together mixed fruit, water, margarine, sugar and bicarbonate of soda for five minutes only.
  2. When cold add egg, flour, baking powder, mixed spice, cinnamon, nutmeg, cherries and sherry / apricot juice.
  3. Mix all ingredients together and place in a lined (I never do) cake tin for 1 1/2 hours at 300°F (or 150°).

    It sometimes takes a bit longer.
