Dark Chocolate and Raspberry Cupcakes

Ingredients

Cakes
140g self raising flour
170g butter
170g caster sugar
3 eggs
30g cocoa powder
200g dark chocolate
approx 54 raspberries (250g should be plenty)

Icing
260g icing sugar
130g butter
100g dark chocolate

A rich silky texture and delicious fruity bursts, this cupcake is a must make for any occasion!

Method

  1. Preheat the oven to 180c
  2. Cream together the butter and sugar
  3. Add 3 beaten eggs to the mixture
  4. Add in the flour and cocoa powder
  5. Melt the chocolate and add it to the mixture, along with 30 chopped raspberries, then spoon into the cases
  6. Bake for about 25 minutes, or until springy to the touch, then set aside to cool
  7. For the icing, mix together the butter and icing sugar
  8. Melt the chocolate and add to the mix
  9. You now have your icing to apply once the cakes are cool!
  10. Top each cake with one whole raspberry
