Week 5 - Spaghetti Vongole

I cannot believe it is the final challenge! I was a bit unsure when I started my first challenge, but week after week my cooking skills improved and I am now getting tonnes of compliments!

This week I was able to make a fantastic Spaghetti Vongole, that classic Italian dish that truly is breathtakingly delicious in its simplicity. The fresh made spaghetti and the sweet, supple Vongole, is what this dish was all about.

The dish was easy but also a bit tricky. The spaghetti needed to be made using the Kenwood Chef Titanium, Pasta Roller and Spaghetti Cutter attachment. I made spaghetti for the first time in my life and it was absolutely fantastic. The recipe worked wonderfully as I followed it to the letter with the help of Raymond’s video and Kenwood’s appliances. The spaghetti needed to be cooked al dente and the Vongole cooked for a few minutes so bringing the two together needed good timing.

I served it immediately onto plates, sprinkled with some tomato, basil, parsley and a little olive oil to finish. Everybody loved it and they finished their plates. My wife said: “If I could give this more than five stars I would! It is by far the best recipe you have made”.

Week 4 - Thai Minced Turkey Salad

After the success of last week’s recipe, I was more than ready for this week’s challenge, as I realised that the secrets behind a great successful dish require professional kitchen tools and equipment, the right ingredients and attention to detail.

I roughly chop the vegetables and throw them all into the Kenwood Food Processor attachment and blitz until everything was finely mixed together. I then minced the turkey breasts using the Kenwood Food Mincer attachment.

Once the peanut oil was heated, the vegetable mixture was thrown in and fried briefly before adding the minced turkey. I did stir-fry the turkey for few a minutes then gently splashed in the sauce. I turned down the heat a little and allowed the turkey and sauce to cook together for another few minutes.

The marriage of textures and flavours is nice. Spicy, sweet and fresh, and above all it was easy to stir together. The Thai Minced Turkey Salad was delicious and looked great on our dinner table. So good that my son asked me “are you sure that you cooked this at home and did not order it from a Thai restaurant?”

Week 3 - Family Friendly Stuffed Lamb Burgers - Two Ways

Just when I thought it couldn't possibly be a successful recipe given my partly-failed attempts at the first two recipes, along comes the most successful burger that I have made in the last couple of years!

It started out as usual, after reading the recipe and watching the video a couple of times, I felt prepared to make my burger. Grinding, chopping and mixing the ingredients was made simple by using my Kenwood Chef Titanium and related attachments.

The burgers looked like Alison’s and I was so happy but the idea of a disaster happening in the oven terrified me! But when I took the burgers out of the oven, they smelt and looked delicious. After we finished our burger I asked my wife and kids how my food was, and enthusiastically they respond that it was great! I couldn’t believe myself and my first sentence was “I am very blessed.” This followed by “Thank you Kenwood”.

Week Two - Banana bread

We love banana bread in our house, but I haven't made any because I can never manage to keep enough bananas since my kids love them - just as much as the minions do.

Banana bread is perfect for autumn mornings, so I woke up early on Sunday morning to watch the video and read the recipe a few times. After watching the video, I thought that I couldn’t possibly go wrong with this recipe because it looked unbelievably easy.

Making the batter was super easy using the Kenwood Chef Titanium and the Food Processor attachment. I poured the batter into my buttered loaf-pan and put into the preheated oven right away. After one hour in the oven, the toothpick showed clean and the banana bread looked perfect! But I am not sure what I did wrong because upon tasting, the banana bread had a bitter taste especially on the bottom layer.

I tried again on the second day, and after leaving to cool it became sweeter and delicious :)

This week’s result is so much better than last week.

Week One - Tuile Biscuits

When I started thinking about Tuile Biscuits, my heart literally started racing because I have never baked such a small and delicate thing.

I started putting the ingredients together, and making the batter was super easy with the help of the new Kenwood Chef Titanium.

I had time to let it rest for one hour in the fridge while I made my leaf stencil. I took an ice-cream plastic lid and cut out different leaf shapes in the size I wanted. Spreading the mixture was the first DISASTER as I could not make a proper leaf shape. :(

The mix went into the pre-heated oven for four minutes, but my biscuits were burnt! Another DISASTER.

I rushed a second batch, but this time I kept my eyes on the Tuile in the oven. My biscuits looked so beautiful and finally the Tuile leaves were crisp and lean :) a perfect combination with the ice-cream.
