Ingredients
700g (11 ½ lb) Old potatoes, peeled
25g (1oz) Butter
150ml (1/2 pint) Milk
Salt and pepper
300g (12oz) Self raising flour
5ml (1 tsp) Baking powder
Method
1. Cut the potatoes into even sized pieces and cook in boiling, salted water until tender. Drain well. Preheat oven to Gas 6, 200C, 190C fan oven.
2. Place the potatoes into the mixer bowl with the butter and using the Flexible Beater, mash on speed 3 for 1 minute, gradually adding the milk whilst the machine is running.
3. Season with salt and pepper and add the flour and baking powder to the bowl. Fold in using the fold button 6 or 7 times or until all the flour is incorporated. Turn out onto a floured surface and knead lightly. Shape into 4 flat rounds approx. 12cm (5”) diameter and mark the top of each with a cross.
4. Place onto a greased baking sheet and cook for 25-30 minutes until risen and golden brown. Serve warm with butter.
