Fattoush Salad Wraps

Fattoush is a Mediterranean bread salad, here we have put the salad in the bread to make a wrap.

Ingredients

Servings: 4
Makes: 4
For the wraps
250 g bread flour
0.5 tsp salt
0.5 tsp cumin seeds
1 tsp nigella seeds
4 Tbsp olive oil
100 g water

For the salad
1  cucumber
6  radishes
½  red onion
4  tomatoes
1  baby gem lettuce

For the dressing
5 g chives
5 g mint
5 g parsley
5 g coriander
1 Tbsp pomegranate molasses
1  lemon
150 g olive oil
0.5 tsp salt


Instructions

STEP 1/7

Add the oil and water into a jug.

Trim, halve and deseed the cucumber.

Trim the raddishes.

Trim and peel the red onion.

Deseed and dice the tomatoes.

Destem the herbs.

Juice the lemon.

STEP 2/7

Fit the Dough Tool to the Food Processor bowl.

STEP 3/7

Add flour, salt, cumin seeds and nigella seeds into the Food Processor bowl.

Attach the lid and ensure it is locked into place.

Start the machine on speed 3.

Carefully pour oil and water into the Food Processor bowl.

Process for 5 minutes.

Transfer the dough into a large bowl and cover.

Prove for 30 minutes.

STEP 4/7

Fit the Thick Slicing Disc to the Food Processor.

Slice cucumber and lettuce into the Food Processor bowl.

STEP 5/7

Fit the Thin Slicing Disc to the Food Processor.

Slice radish and red onion into the Food Processor bowl.

Transfer all the vegetables into a clean large bowl.

Add tomatoes into the large bowl.

STEP 6/7

Clean the Food Processor bowl and fit the Mini Bowl and Knife Blade.

Add herbs, molasses, lemon juice, oil and salt into the bowl.

Pulse until all the herbs are chopped and everything is combined.

Place the dough on a work surface.

Divide the dough into 4 and roll out into circles around 20 cm.

Head the griddle on a high heat.

Griddle the dough for about 2 minutes on each side.

STEP 7/7

To Serve

Mix the dressing and the salad and divide between the wraps.
