Spicy Raisin Bars
Quick and easy to make with the help of the Kenwood Chef. Use the multi mill attachemnt for the spices, the liquidiser for the egg mixture, then mix everything with the K beater.
150ml raisins 1 egg
250ml boiling water 50g nuts
1x2 cinnamon sticks 125ml oil
1/2 nutmeg 310g cake flour
2 whole allspice berries 5ml bicarb of soda
3 whole cloves dash salt
place raisins and hot water in liquidiser attachment of the Kenwood Chef. Let mixture cool. Grind cinnamon, nutmeg,allspice and cloves in the Multi-Mill attachment. Add about 15ml of the spice to the flour along with the bicarb and salt. Place the ingredients in the Chef bowl .
Add sugar, egg,nuts and oil to the raisins and water in the liquidiser. Blend until ingredients are finely chopped. Pour raisin mixture into the dry ingredients and mix at low speed with the K-beater until just moistened. Turn mixture into a greased and floured 23x32cm baking pan. Bake at 180 degrees C for about 20 minutes.A skewer inserted near the centre comes out clean when the bars are done. Remove pan from the oven and place on a wire cooling rack. Let cool in the pan, then cut into bars. Makes about 24 bars.
