Ingredients

  • 10 tinned anchovies
  • 2 cloves of garlic, peeled
  • 1 shallot, peeled
  • 1 ripe tomato, skinned
  • 1 tbsp red wine vinegar
  • Small handful of parsley
  • 2 tbsp extra virgin olive oil
  • Freshly ground black pepper


To serve

  • Selection of vegetables for dipping

Serves: 4

Preparation time: 10 minutes

Cooking time: no cooking

Method 

  1. Put all the ingredients except the oil into the blender and use the coarse chop programme to blend together. Add the oil and give 2 pulses to mix in. Season with freshly ground black pepper.
  2. Serve with a selection of fresh vegetables, either raw or blanched.

Tip: Can also be served on toasted slices of french bread.
