Potato Latkes using Multipro Food Processor

  • Equipment used: Multipro food processor, thin shred cutting disc, knife blade

Instructions:

  1. Heat the oven to 350°F
  2. Cut the zucchini so it fits through the feed tube. Cut the potato so it fits through the feed tube. Use the thin shred disc on speed 2. Empty shredded pieces into bowl.
  3. Add in one egg immediately after. Mix by hand. Strain excess liquid from the bowl. Add in garlic powder, Herbs de Provence, flour and cheese, salt and pepper to taste. Mix again until well incorporated.
  4. Cup a handful of the mixture into a ball. Squeeze the liquid out as you form a flat shape.
  5. Coat the bottom of a non stick pan with olive oil. Turn to medium –high heat. Place 4 of the patties (depending on size of your pan) into the pan. After about 2 minutes or when patties are lightly browned, flip them. After another minute, remove from heat and transfer patties to a paper towel and pat dry.
  6. Once dry space each pattie onto a non-stick baking pan or cookie sheet. Once all have been moved to the baking pan, place in the oven at 350°F for 15 minutes.
  7. Mince the cilantro in the food processor bowl with the knife blade on speed 3 for about 15 seconds
  8. Mix the yogurt and cilantro together with a pinch of salt and pepper. Place a dollop over each latke and serve.

 

 

Ingredients

  • 2 medium zucchini
  • 1 large Idaho potato, peeled (can also use russet or Yukon Gold potatoes)
  • 1 egg
  • 2 tablespoons of garlic powder
  • 1 tablespoons Herbes de Provence
  • 1/2 cup of flour
  • 1 cup of shredded parmesan cheese.
  • Salt and Pepper to taste(about a teaspoon each)
  • 3 tablespoons of oil
  • 2 tablespoons of cilantro, minced

1 cup of greek yogurt
