Clafoutis is a baked dessert of cherries arranged in a buttered dish and covered with a thick flan like batter. The clafoutis is dusted with powdered sugar and served lukewarm.

Preparation time:  10 minutes
Cooking time: 40 minutes
Serves: 4 to 6 - Fills: 9 in dish

Method

  1. Place all the ingredients into the blender and blend at maximum speed for 50 seconds.
  2. Grease a 9 in ovenproof dish. Scatter the pitted cherries over the base. Pour the mixture into the dish and place in a preheated oven set at 350ºF and bake for 40 minutes until light and golden. Turn the heat off.
  3. Serve with whipping cream.

Cook's Tips: Leave the Clafoutis in the oven with the door open for 1 hour before serving.

Eggs 3
Sugar 1/3 cup
Milk 1 1/4 cups
Vanilla extract ½ tsp
A pinch of salt
Flour 3/4 cup
Baking powder ½ tsp
Cherries (pitted) 1 1/3 cups
Whipping cream, to serve 1/4 cup
