Red Cooked Chinese Pork Shoulder with Moo Shu Pancakes

Method:

  1. Heat oil in Cooking Chef bowl for a few seconds then add first 7 ingredients. Set temperature to 285 F° on stir setting 1 for 2-3 mins.
  2. Attach stirring tool to machine. Add the next 5 ingredients and top pork with water.
  3. Add splash guard, set stir setting to 3 and cook for 1 ½ hours until pork is cooked through and flavors are aromatic.
  4. 10 mins before pork is done add Moo Shu pancakes to the steamer basket and drop basket into Cooking Chef bowl. Place splashguard back on machine and finish cooking.
  5. Remove steamer basket and plate dish.
  6. Serve with your choice of toppings (radishes, pickled greens, etc)

  • Dried Chili                                       1/2 oz.
  • Star Anise                                        10 pc
  • Szechuan Peppercorn                  1/2 oz
  • Garlic, chopped                              8 oz
  • Ginger, sliced                                 8 oz.
  • Red Onions, large dice                3
  • Salt                                                   1 pinch
  • Orange, halved                              2 ea.
  • Rock Sugar                                     28 oz (2 Bag)
  • Shao Xing wine                              6 cup
  • Soy Sauce                                       6 cup
  • Pork shoulder                                 3 lbs
  • Water                                                2 qt.
  • Oil                                                      1 Tbsp
