2 medium ripe vine tomatoes (approx 175g)1/2 red pepper, deseeded1/4 cucumber1 spring onion1 clove garlic1 tsp tomato puree75ml waterA few grinds of black pepperPinch Himalayan saltDash of Tabasco or lemon juice
Preparation Time: 5 minutes
1. Roughly chop the tomatoes, pepper, cucumber and spring onion before putting in the beaker
2. Add the garlic, tomato puree and water, then season with the salt and pepper and Tabasco or lemon juice
3. Blend until smooth.
