STRAWBERRY CHEESE TARTLETMakes around 40 mini tartlets Appliances Used Kitchen Machines, Oven Pastry Ingredients 125g butter 30g caster sugar 1 egg 270g plain flour 1/4 tsp salt Filling Ingredients 500g cream cheese 150g caster sugar 2 grated zest of lemon 4 tbsp lemon juice 1/2 tsp vanilla essence 1 box strawberries Method 1. Add butter and sugar into a mixing bowl. Whisk until light and fluffy. 2. Add egg and mix well. 3. Add flour and salt, and mix until it becomes dough. Cover pastry and chill for about 15 - 30 minutes. 4. Roll out the pastry on a floured surface. Using a pastry cutter, cut circles to fit the tartlet moulds. 5. Prick the bottom of the pastry with a fork to prevent it from puffing as it bakes. 6. Preheat the oven at 170ºC and place the rack on the middle slot of the oven. 7. Bake for 25 - 30 minutes until golden brown. 8. Remove from oven and cool before adding filling. 9. Combine the cheese and sugar, and whip until creamy and light. Add lemon zest, lemon juice and vanilla essence. Mix well. 10. Scoop a heap to fill in the tart case and top with slices of strawberries. 11. Chill in the refrigerator. Sprinkle icing sugar on top of strawberries before serving.
