MINI EGG TARTS (makes 26 pieces)


170g Plain flour

Pinch of salt

100g Butter

30g Caster sugar

1 Egg Yolk

½ tsp Vanilla essence



3 Eggs

80g Caster sugar

70ml Milk

230ml Water


METHOD - Crust

1 Place plain flour, salt and caster sugr into a mixing bowl.

2 Use K-beater and mix at low speed

3 Add butter, egg yolk and vanilla essence and knead until it becomes soft dough

4 Take about 11g of dough and press onto a tart mould

5 Prick with fork


METHOD - Egg custard filling

1 Using a balloon whisk, whisk eggs and sugar until thick and creamy

2 Add milk to mixture and continue to whisk until combined

3 Add water gradually and continue to whisk together

4 Pour into molded tart dough

5 Preheat oven at 170-180 deg Celsius and bake for about 25 minutes per tray

6 Remove and serve when warm
