Chocolate Pecan Bars

Makes 40pcs

125g Butter
35g Caster Sugar
190g Plain flour

200g Baking Chocolate
180g Muscovado Sugar
2 tbsp Golden Syrup
150g Butter
4 Eggs
180g Chopped Pecans

1) Using the K beater, cream butter and caster sugar until creamy.

2) Add flour and knead into a dough.

3) Preheat oven at 180oc

4) Line a 10’’ x 10’’ size baking tray with greaseproof paper at the base and grease sides.

5) Press dough flatly onto baking tray and bake for 15 to 20 minutes or until light golden brown.

6) Place chocolate, muscovado sugar, butter and golden syrup into a saucepan over low heat and stir until ingredients melt. Leave to cool.

7) Using the balloon whisk, whisk eggs until creamy and light.

8) Pour in chocolate mixture and whisk evenly. Fold in chopped pecans.

9) When pastry is ready, take out from oven. Leave slightly cool.

10) Pour chocolate mixture over the pastry and bake for another 25 to 30 minutes, or until set.

11) Cut into squares to serve.
