Marmalade Almond Bars

Crust Ingredients

2 cups (250g) plain flour

6 tbsp caster sugar

180g cold butter, diced

60g almonds, chopped

Filling Ingredients

1/2 cup (approx 300g) marmalade jam (add one tbsp of warm water if jam is too thick)

250g butter, diced

1 cup (250g) sugar

4 large eggs

175g flour

1 tsp baking powder

Red & green food colouring

Frosting Ingredients

2 cups (500ml) whipping cream


Method - Crust

1. Grease and line a 13 x 9 inch (33 x 23 cm) baking tray and preheat oven to 180 degress Celsius

2. Combine flour and sugar in a mixing bowl

3. Using the mixer blend in the butter to resemble breadcrumbs.

4. Add in the chopped almonds and mix well

5. Press evenly into prepared tray and bake till golden around edges (about 10 minutes)


Method - Filling

1. Place jam in a bowl and blend it with warm water making it easy to spread

2. Spread jam evenly over baked crust

3. Cream butter and sugar till light yellow and creamy, add one egg at a time, beating well after each addition

4. Fold in the sifted flour and baking powder and blend thoroughly

5. Divide batter into 2 bowls. Add food colouring into each bowl and mix well

6. Drop by spoonful over jam alternating the colours

7. Bake in the oven till top is set and golden (30 minutes). Allow to cool completely



1. Whip cream till peaks are formed. Spread onto cooled tray, cut and serve
