Fried Garoupa with Thai Chilli

FRIED GAROUPA WITH THAI CHILLI

Appliances Used
Deep Fryer (DF530), Blender (BL745)

INGREDIENTS
1 x 600g red garoupa
5 tablespoons Thai chilli sauce
5 cloves garlic
3 small onions
2 red chilli
0.5 piece balachan

METHOD
1. Fry fish in Kenwood DP530 Deep Fryer (fish to be cut into 2 sections if necessary).

2. When cooked, leave aside to drain out excess oil.

3. Blend other ingredients in Kenwood BL745 Blender until fine paste.

4. Add oil to work and stir-fry paste till fragrant.

5. Dish out and pour over fish.

6. Garnish with parsley and carrots, and serve.
