Shepards Pie                                                                                                                                 Oven Temp 200 deg C                                                                                                                (Serves 4)

Ingredients                                                                                   &nbspp;                                                        2 tbsp Cooking oil
I medium onion, finely chopped
2 tbsp flour
500 g minced beef
1 can tomato paste
½ cup water
1 cup of tomatoes
2 cups mixed vegetables
salt
grounded black pepper                                                                                                                      1 kg potatoes
100 ml hot milk
100 g soft butter
Dash of herbs
½ cup Cheddar Cheese
Salt to taste

Method                                                                                                                                                  1. Heat the oil in a large frying pan, add the onion and stir fry till lightly brown.           
                                                                                                                                                               2. Add the flour and brown it slightly.
                                                                                                                                                                    3. Next add beef and mix it well. Stir in the paste, tomatoes and water. Bring to a boil and then reduce heat to a simmer for 10 minutes
                                                                                                                                                                                    4. Stir in veggies and adjust seasoning. Transfer into a deep oven proof dish.

5. Boil potatoes until cooked through, then drain and mash. Add the milk and butter and herbs - combine well and adjust seasoning.
                                                                                                                                                                     6. Spoon the mashed potatoes over the meat and sprinkle cheese over the potatoes. Place into the oven for 10-15 minutes until the cheese melted and has a nice golden colour.
                                                                                                                                                               7. Serve immediately with fresh bread and a tossed green salad.
