Blueberry Pecan Muffins

BLUEBERRY PECAN MUFFINS

makes about 12 pcs

TOPPING INGREDIENTS

250g blueberries

80g pecans (toasted and chopped)

CAKE INGREDIENTS

250g plain flour

1 tbsp baking powder

2 tsp custard powder

2 eggs

250g caster sugar

185ml milk

220g melted butter

 

METHOD

1. Sift flour, baking powder and custard powder into a mixing bowl, leave aside

2. Using another bowl, fix the balloon whisk and whisk eggs with sugar until creamy

3. Gradually pour in the milk to mix evenly followed by the melted butter

4. Add the dry ingredients into the mixture and mix until combined

5. Add in the pecans and mix well

6. Preheat oven to about 180 - 190 deg C

7. Scoop 2 tbsp of mixture into a muffin cup, scoop 1 tsp of blueberries on top and scoop another 1 tbsp of mixture to cover the blueberries

8. Place all muffin cups on a baking tray and bake for 30 minutes or until golden brown
