Walnut Mousse

makes about 500ml of mousse


160g walnuts (toasted)

200ml milk

200ml whipping cream

2 tsp gelatine powder

3 tbsp water

2 egg yolks

100g caster sugar



1. Place milk and walnuts into a blender and blend until creamy and combined. Place aside

2. Pour whipping cream into a mixing bowl, use the balloon whisk to whip until soft peaks. Chill in the refrigerator

3. Using a handmixer, whisk the egg yolks and sugar until creamy, sitting on a bowl of hot water

4. Add the gelatine mixture and mix evenly

5. Pour in the walnut and milk mixture and mix evenly

6. Finally fold in the whipping cream manually

7. Prepare ice cream maker and pour in the mixture to mix for about half an hour

8. Chill and serve
