MIXED FRUIT COOKIES                                                                                                                 

Makes about 45pcs of cookies

INGREDIENTS :                                                                                                                                120g Butter
60g Caster Sugar
2 tbsp Condensed Milk
2 Egg yolks
220g Plain Flour
½ tsp Bicarbonate of Soda
½ tsp Vanillin Powder
100g Raisins (Chopped)
50g Cherries (Chopped)

Method                               &nbssp;                                                                                                                       1. Place butter and caster into a mixing bowl, use
‘K’ Beater and cream until sugar melts.

2. Add in the condensed milk and cream together.

3. Add in the egg yolks and continue to mix until well
combined.

4. Sift flour, bicarbonate of soda and vanillin powder
into butter mixture and mix until it becomes a dough.

5) Finally add in the chopped raisins and cherries into
the dough and mix in evenly.

6) Preheat oven at 170º C.

7) Line a baking tray with aluminium foil or greaseproof
paper.

8) Shape dough into bite sizes and bake at 20 to 25
minutes per tray.
