COFFEE ALMOND BISCUITS (Makes about 28 pcs)
INGREDIENTS 180g Ground Almonds (Lightly Toasted) 80g Caster Sugar ½ Tbsp Instant Coffee Granules ½ Tbsp Hot Water 1 Tsp Coffee Emulco 2 Egg Whites (Lightly Beaten) 50g Slivered Almonds (Strips) METHOD 1) Place ground almonds and sugar into a mixing bowl, use K beater to mix at low speed. 1) Mix coffee granules with hot water until melted, add in the coffee emulco. 2) Gradually add in to the mixture. 3) Lightly whisk the egg whites and mix into the mixture until you get a soft sticky dough. 4) Preheat oven at 170ºC and line baking trays with greaseproof paper. 5) Wear disposable gloves and rub a little oil between fingers before shaping dough. 6) Roll dough into 11g ball sizes and lightly flatten dough with fingers. 7) Decorate with 2 sticks of almonds. 8) Bake each tray for about 20 minutes or until golden.
