Almond Biscotti

Oven temperature : 160 deg C/325 deg F

Ingredients :
1 ¼ cup of caster sugar
4 eggs at room temp
1 tsp vanilla essence
3 cups plain flour, sifted
1 tsp baking powder
150 gm almonds – (whole or sliced- lightly toasted)

Method :
1. Preheat oven and line a baking trays with greaseproof paper.                                               
2. Beat up the sugar, 3 eggs and vanilla essence in a mixing bowl until thick & pale.          
3. Add the flour, baking powder and almonds, combine well to form a dough.                       
4. Divide the dough into two and shape it into a log and flatten it slightly.                                
5. Brush with the remaining egg (lightly beaten)                                                                            
6. Place the logs on to the trays and bake for 20- 25 mins.              &nbssp;                                          
7. Remove from oven and set aside to cool. Reduce the oven temp to 140 deg C.               
8. When cool slightly, cut into slices and line them on a tray and return it to the oven and bake it a further 15 mins until golden brown and crisp.                                                                
9. Remove from oven and cool completely before storing it away.
