Traditional Lapis

Appliances Used
Major KMM750, Oven (MO690)

375g butter
170g sugar
1/2 tsp brandy
18 egg whites
110g top flour
1/2 tsp cream of tartar
1 tsp mixed spice

1. Egg yolk mixture: In KMM750's stainless steel bowl, use the whisk to whisk egg yolks and 100g sugar till thick. Put aside.

2. Egg white mixture: In KMM750 stainless steel bowl, add the remaining sugar, 1/2 tsp cream of tartar and egg whites. Use high speed to whisk the eggs till stiff.

3. Mix the cream butter together with condensed milk until creamy. Sift top flour and mix it with the mixed spice.

4. Fold in the egg yolk mixture and egg white mixture to the creamed butter, adding a little flour at a time. Lastly, add in the brandy.

5. Preheat oven to 200ºC  on grill.

6. Grease tray with butter. Pour 3 tsps of the batter into the tray and spread mixture evenly. Bake for 5-7 minutes or till light brown. Remove tray from grill.

7. Using a skewer or toothpick, price holes on the top layer of cake to prevent air bubbles.

8. Repeat (7), layer by layer, till mixture is used up. Unmould cake at once. Turn it over on a cooling rack to cool for 1 hour.
