Appliances Used
Major KMM750, Oven (MO690)

350g Superlite flour
250g brown syrup
75g peanut oil
1 tsp Lye water (alkaline)
1 egg (for brushing)

1kg lotus paste
30g melon seeds

1. In the KMM750 stainless steel bowl, sift together the Superlite flour and make a well in center. Pour the syrup, Lye water and oil. Using the dough hook, knead until smooth. Leave to rest for 30 minutes.

2. Preheat Kenwood oven to 160ºC .

3. Mix lotus paste with melon seeds and divide into pieces of 160g. Divide dough into pieces of 38g each.

4. Roll out each piece to be as thin as possible and place the filling in center. Wrap carefully.

5. Dust the mould lightly with flour and press the mooncake dough into the mould, levelling the top. Remove the shaped mooncake dough by gently knocking it out.

6. Place the mooncakes on a baking tray and bake for 10 minutes.

7. Remove from oven and brush egg on the mooncake surface. Bake for another 30-35 minutes until dark brown.
