Lemon Yogurt Cake


125g butter (cubed)

2 tsp grated lemon rind

1 cup caster sugar

2 eggs

1 1/2 cup self raising flour

3/4 cup plain yogurt

1/3 cup lemon peel



Oven temp: 180 deg C

1. Grease 11cm by 25cm loaf pan, cover base with baking powder

2. Combine butter and sugar in a medium bowl and beat on low speed until combined

3. Add in the lemon rind, eggs and beat on medium speed till it is lighter in colour

4. Add in the flour, yogurt and lemon peel. Mix well

5. Pour the mixture into prepared pan

6. Bake in moderate oven for 1 hour

7. Stand in a few minutes before turning out to cool
