FRUIT COBBLER CAKE

Oven temp: 180 deg Cel

Ingredients

5 cups apples (shaved and diced)

1 cup raisins

½ cup bananas (diced)

½ cup strawberries (diced)

¾ cup brown sugar

1/3 cup flour

¼ cup lemon juice

2 tbsp rum (optional)

Topping ingredients

1¾ cup flour

2 tbsp sugar

4 tsp baking powder

½ tsp salt

125g butter

1 cup milk

 

Method

1. Combine all the fruits together with the sugar, flour and lemon juice (and rum, if preferred) Mix well

2. Grease a 10' or 25cm cake pan or pyrex dish

3. Spread out the fruit mix evenly. Set aside

4. Mix together flour, sugar, baking powder anad salt

5. Rub in the butter into the flour mix till it resembles bread crumbs

6. Add the milk to form batter

7. Drop spoonfuls over fruits till all are covered

8. Bake in a hot oven for 25-30 minutes till the topping are golden brown

9. Serve warm.
