Fluffy Scones

FLUFFY SCONES
(makes 12 pcs)

Appliances used
Oven (MO690)

Ingredients
200g plain flour
25g caster sugar
50g butter
11/4 tsp cream of tartar
3/4 tsp bicarbonate of soda
100ml milk
1 egg (for brushing)

Method
1. Sift plain flour into Kenwood mixing bowl.

2. Add caster sugar and cold butter.

3. Using the rubbing method, mix the 3 ingredients until crumbly.

4. Sift the cream of tartar and bicarbonate of soda 2 - 3 times before adding into mixture.

5. Make a well in the center and gradually pour in milk. Knead to make dough.

6. Preheat oven to 210ºC.

7. Line baking tray with greaseproof paper.

8. Roll dough to 1/2" thickness and use 4cm cutter to cut out shape. Brush top with egg.

9. Place onto baking tray and bake for 10 - 12 minutes.

10. Serve with jam and fresh cream.
