CHOCOLATE DUST ROLLSmakes 8 pieces Appliances UsedKM001 Mixer, MO690 Oven Ingredients Chocolate Sponge 3 Egg Yolks 30g Caster Sugar 2 tbsp Cocoa Powder 3 Egg Whites 20g Caster Sugar Frosting 130ml Whipping Cream 120g Baking Chocolate 2 tsp Rum (Optional) Filling 130ml Whipping Cream 2 tbsp Caster Sugar 2 tbsp Cocoa Powder Topping Cocoa Powder Method 1. Preheat oven at 180 ºc. 2. Line a 10’’ x 12’’ baking tray with greaseproof paper. 3. Using 2 mixing bowls, separate egg whites and egg yolks. 4. Use K beater to beat egg yolks and caster sugar (30g) until creamy and light. Sift in the cocoa powder and mix evenly. 5. Use balloon whisk to whisk egg whites and caster sugar (20g) until stiff peaks. 6. Fold egg whites into mixture manually. 7. Bake for 15 to 20 minutes until light brown. Cool on a board. 8. Place whipping cream, sugar and cocoa powder into a mixing bowl and whisk until creamy. Cut cake into half and spread chocolate cream on top. 9. With the help of a greaseproof paper, roll up the cake and slightly tighten. 10. Heat whipping cream and add in baking chocolate and stir until chocolate melted. Remove from heat. 11. Add rum if preferred. 12. Frost cake with a spatula or spreading knife. 13. Smooth surface with a small sheet oof paper. 14. Use a fork to draw lines on surface. 15. Use a sift to sprinkle cocoa powder over cake. 16. Cut into 2½’’ wide pieces with knife.
