Method

  1. Place all the ingredients except the fruit in the bowl and mix on speed 1 increasing to maximum as the ingredients are incorporated.
  2. Beat for one minute, and then fold in the fruit on a low speed.
  3. Pour in to a greased 500ml pudding basin and cover with foil.
  4. Steam for 2 - 2½ hours.

Serve with lemon or caramel sauce

  • 125g self raising flour
  • 2.5ml mixed spice
  • 2.5ml powdered ginger
  • 5ml cinnamon
  • 100g creamed margarine
  • 100g sugar
  • 1 egg
  • 60ml milk
  • 100g dried fruit
