Recipe for Kenwood by Eugene Hamilton

Ingredients

For the buttermilk marinade:

  • 480 mls buttermilk or normal milk
  • 3 tbsp mls Dijon mustard
  • 2tbsp minced garlic
  • 1tsp salt
  • 2tsp dry mustard
  • 1tsp cayenne pepper
  • 1tsp cracked black pepper
  • 1tsp soy sauce
  • 1tsp chicken stock paste
  • 1tbsp self-rising flour
  • 2 eggs

For the coating mix:

  • 1 cup flour
  • 3/4 cup fine bread crumbs
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/3 tsp dried sage
  • 1 tbsp freshly chopped parsley
  • 2 large cloves garlic, chopped
  • 1 tsp black pepper
  • 3kg chicken thigh skin on, cut in pieces

Method

  1. In a bowl mix all the marinade ingredients together. 
  2. Place chicken pieces into the mixture and leave overnight. 
  3. In a separate bowl, combine all the coating ingredients and mix well with a fork. 
  4. Remove the chicken from the marinade and dip into the coating mixture. 
  5. Fry in oil until cooked.
  6. Serve immediately.
