Recipe for Kenwood by Eugene Hamilton

Ingredients

  • 2tbsp finely chopped garlic
  • 2tbsp finely chopped ginger
  • 4tbsp finely chopped coriander root
  • 2tbsp chopped red chilli (mild)
  • ½ cup fish sauce
  • 1 cup fresh lemon juice
  • 150g melted palm sugar
  • Coriander
  • Vietnamese mint

Method

  1. Using the Kenwood Citrus Press, juice the lemons.
  2. Blend all ingredients together and store in an air tight container until needed.
  3. When ready to use add chopped coriander, thai basil & mint.
