Recipe for Kenwood by Eugene Hamilton


  • 3 lots of 134 gms Sugar
  • 275 gms Egg Whites (room temperature)
  • 3 tsp corn flour
  • 2 tsp lemon juice


  1. Using the Kenwood Citrus Press, juice the lemon.
  2. In a Kenwood Mixer on high speed, whisk the egg whites and the first measure of sugar until soft peaks start to form.
  3. Add the second measure of sugar and whisk for five minutes.
  4. Add the last measurement of sugar, corn flour and lemon juice for 10 seconds.
  5. Transfer into a piping bag and pipe into 5cm rings on a baking paper-lined gastro tray and bake for 55 minutes at 120c.
