ALMOND BUTTER
COOKIES

Ingredients
600g butter
450g caster sugar
2 eg yolks
1 egg white
830g plain flour
250g ground almond
1 tsp baking powder
1 tsp bicarbonate of soda
500g whole almonds
Method
1. Lighlty toast ground and whole almonds in oven (MO690).
2. Beat butter and sugar with the KMM750 (using K-beater) until
white.
3. Add egg white and yolks.
4. Add plain flour to batter and mix well.
5. Add ground almonds, baking powder and bicarbonate of soda, and
mix well again.
6. Use a cookie press and mould cookies.
7. Coat a little egg white on top of cookie before placing a whole
almond on it.
8. Preheat oven at 180ºC and bake cookies for 20 minutes per
tray.
