Spiced Butternut Squash Soup

Made with these products:


  • 1 tbsp ground coriander
  • 1 tbsp ground turmeric
  • 1 tbsp ground cumin seeds
  • 1 clove of garlic
  • 1 medium sized butternut squash, peeled and cut into long, narrow pieces
  • 3 red chillies, sliced and seeds removed
  • 2 tbsp olive oil
  • Salt and pepper to season
  • 750ml chicken orvegetable stock


  1. Slice the butternut squash and chillies and chop the garlic. 
  2. Heat some oil on a medium heat in a large frying pan and add the squash, chillies and garlic. Season with a little salt and pepper and add the ground spices.
  3. Cook until the squash is soft and starting to turn golden on the edges.
  4. Add the chicken stock to the pan. Bring to a boil then reduce the heat to a simmer and cook for 5 minutes.
  5. Leave to cool for a few minutes, attach the blender attachment and blend.
  6. Check the seasoning and serve with a little olive oil and the ground spices.
