Tray Bake

Ingredients

For the cake:

  • 270g Butter
  • 330g Sugar
  • 330g Self-raising flour
  • 70g Ground almonds
  • 4 Medium eggs
  • 120g Frozen raspberries 

For the icing:

  • 180g Sugar
  • 30g Water
  • 1/2 tsp Vanilla extracts

For the cake:

  1. Place the butter and sugar into the bowl
  2. Process until fluffy
  3. Add self-raising flour and ground almonds - mix until combined
  4.  Add 4 medium eggs - mix until combined
  5. Line the tray with greaseproof paper
  6. Add the mixture to the tray
  7. Sprinkle the raspberries over the top
  8. Place in a preheated oven
  9. To test whether the cake is cooked, put a thin knife into the cake and pull it out slowly. If the kinfe has no wet cake mixture on it the cake is cooked
  10. Allow the cool 

For the icing: 

  1. Put all the ingredients into the food processor and process
  2. Drizzle the izing over the cooled cakes and allow to set
