Carrot Soup

Ingredients

  • 2 carrots, trimmed, unpeeled 
  • 1cm knob ginger, peeled 
  • 1 vegetable stock cube 
  • 1/3 cup raw cashew nuts 
  • ¼ cup fresh coriander 
  •  Boiling water straight from the kettle 
  • Salt

Method

  1. Place all ingredients into the goblet. 
  2. Fill the goblet with boiling water up to the indicated 2 cup mark on the goblet. Secure the lid. 
  3. Press the soup function. Press again. 
  4. Season to taste with salt and pepper. 
  5. Serve in disposable cups.
