Protein Pancakes with Fresh Berries

Ingredients

  • 1 1/4 cup rolled oats
  • 2 eggs
  • 1 cup almond milk
  • 1 heaped tablespoon vanilla protein powder
  • oil spray for cooking
  • fresh berries and honey to serve

Method

  1. Place oats into the small chopper. Secure the blades. Lock into the base and pulse 4-5 times or until oats are finely chopped. 
  2. Place all remaining ingredients into the large jug, plus oats. 
  3. Pulse 4-5 times or until a smooth batter. 
  4. Heat up a frypan and lightly spray with oil. 
  5. Add 1/4 cup of batter to the pan and cook for 1 minute on each side or until golden. 
  6. Repeat with remaining mixture. 
  7. Serve with fresh berries and honey.
