Thai Carrot Soup - MKR

Ingredients

  • 2/3 cup raw cashew nuts 
  • 1/4 cup fresh coriander 
  • 3 carrots, trimmed 
  • 1 vegetable stock cube 
  • 1 clove garlic 
  • 1cm piece peeled ginger 
  • 1 long red chilli 
  • 2 cups boiling water 
  • Salt and freshly ground black pepper, to taste

  1. Place all ingredients, pouring the hot water in last. Secure the lid. 
  2. Using the variable speed control, place on MAX for 30 seconds or until smooth.  
  3. Season to taste with salt and pepper. 
  4. Pour into bowls and serve.
