Pavlova is a great dessert, as it allows the cook to show their artistic talent. You can use just about any variation of berries and soft fruits on top.

Equipment: baking tray, baking paper

Method

  1. Pre-heat the oven to 100 °C and line a baking tray with baking paper.
  2. Attach the Whisk and mixing bowl, making sure they are spotlessly clean and free of any grease.
  3. Add the egg whites and whisk on a high speed for 3-4 minutes until stiff peaks form.
  4. Add the caster sugar a tablespoon at a time until the mix is glossy. Keep the machine running and add the corn flour, vanilla and white wine vinegar.
  5. Spoon the meringue mixture onto the lined baking tray into fist sized portions, leaving a large gap between each one. Using the back of the spoon make an indent in the middle of each one.
  6. Bake in the oven for 1 hour.
  7. While the meringue is cooking, attach the Creaming Beater and add the mascarpone, cream and icing sugar to the bowl.
  8. Mix on a slow speed until the mixture thickens.
  9. To serve, place some of the mascarpone mixture into the centre of each meringue and top with fruits.

Ingredients

Meringue ingredients:

4 egg whites
225g caster sugar 
1tsp corn flour 
1tsp vanilla essence 
1tsp white wine vinegar

To serve ingredients:

250g mascarpone 
100g whipping cream 
100g icing sugar 
2 slices of pineapple
1 medium mango peeled, stoned, sliced
1 papaya peeled, deseeded and sliced
1 passion fruit
